The Dirty Outlaws has some great death scenes. John Barta and his soldier buddie need pretty long (and many bullets) to pass away.
But top of the pops is Pierro Lulli! His Blindman is great acting, and Blindman’s death it over the top!

I can tell the least over the top death scene…In the Hellbenders when they kill the remaining two soldiers in the convoy at the beginning, one guy falls over with barely any THUD…

I would go for Thomas Milian in The bounty killer/ Precio de un hombre. Man it takes him hours to die. And he is getting into the dirt and sand breathing his last breath and stuff. Good one, over the top and in close up. I can imagine how much Milian must have loved that scene, he always seems to be a bit cocky…
I gofor Tomas Milian in any movie he dies in. Four of the Apocalypse in particular.
Not sure if I mentioned it but also Peter Carsten in And God Saidto Cain. They should make a drinking game about it with someone taking a shot of whiskey every timehe yells HAMILTON!!! or GARY HAMILTON!!!
